The Radio Button and Multi-Choice options are the two primary question types. With a Radio Button, you present your member with multiple choices and they choose the single option they most prefer. The Multiple Choice is just that--you allow your members to choose multiple choices that you have defined.
The Short Text response is where you can gather short comments from your members if you present them with a question; these are viewable to you in the Results.
